Handmade at Doddington Dairy in Wooler, Northumberland using traditional methods, Cuddy’s Cave is a close textured Dales style cheese.
A mild cheese, yet full of flavour, Cuddy’s Cave is aged for 3 to 6 months, giving it time to develop a complex, subtle citrus taste.
Cuddy’s Cave derives its name from the local cave, (formally known as St Cuthbert’s Cave) where it is said that local Anglo-Saxon monks, including St Cuthbert, hid from the Vikings during the 7th century.
Cut cheese usually remains good for 4 weeks.
