Free Range Stuffed Chicken Breast with Wrapped in bacon with Mascarpone

From our own free range chickens, our breasts are generously stuffed with mascarpone cheese and wrapped in our free range bacon. Because our chickens are older than commercially produced birds, their breasts are bigger. One chicken breast easily serves 2 (or one hungry Yorkshire farmer!)

Because our chickens are free to roam, they develop strong, powerful muscles, unlike indoor reared birds. As a result, they are best cooked long and slow, at no more than 170 degrees Celsius.
